性状：

白色或微蜡状固体，有愉快的气味，有脂肪味。能溶于热的有机溶剂，如醚、苯、丙酮和矿物油，不溶于水。但在少量表面活性剂存在下，能在热水中分散。半数致死量（小鼠，腹腔）200mg/kg。商品常为甘油单硬脂酸酯和甘油单软脂酸酯的混合物。单甘酯为油包水型乳化剂，在热水中经强烈震荡而乳化。分子蒸馏单甘酯比粗甘酯纯度高、颜色洁白、乳化效果好。其乳化和保鲜效果比粗单甘酯高两倍，对面包直链淀粉复合指数可从粗单甘酯的28提高到92。
